Instructions
In a large pot add sugar and corn syrup. Heat over medium high heat until a full boil. Stirring constantly
Let boil for 10 seconds and remove from heat. IF you have a digital thermometer you want to reach 125 - 130 degrees.
Remove from heat and Add Peanut Butter and stir to melt
Add Rice Cereal and stir to combine making sure to lift from the bottom and evenly coat all cereal
Pour in a greased cookie sheet and spread evenly.
In a separate bowl combine Chocolate chips and butterscotch chips together. Microwave for 30 seconds and then give them a good stir. Microwave again for an additional 30 seconds and stir. If additional time is needed to melt chips add 15 seconds at a time and stir in between.
Pour melted chocolate over top of rice krispy treats and spread evenly over entire baking sheet.
As bars cool so will the chocolate. Allow cookie bars to set on counter or in a cool place until ready to serve.
Notes
Substitutions.
We love to use Peanut Butter chips in place of butterscotch chips. It's also fun to top with Reese's Pieces or mini peanut butter cups too.Use Corn Flakes in place of Rice Krispie Cereal in a pinch. It's also wonderful.I have had these Scotcharoo Bars made with Oatmeal instead of Rice Krispie Cereal. They are both delicious, but I do prefer the rice cereal.
