Instructions
Cookies
Pre-heat oven to 350 F Degrees. Line a baking sheet with parchment paper or use silicone baking mat so that the cookies don’t stick after baking.
In a large mixing bowl cream together butter and granulated sugar. Scrape down sides of bowl as needed. Mixture will be light and fluffy.
Mix in egg and vanilla extract before adding vegetable oil and powdered sugar. Then continue to cream together for an additional 2-3 minutes.
Gradually add the remaining dry ingredients until combined.
Optional - Add Green Food Color to the cookie dough and stir until the cookie dough is one consistent color.
Scoop cookie dough using a small size #50 Cookie Scoop.
Roll cookie dough in granulated sugar and place on baking sheet lined with parchment paper or silicone mat at least 2 inches apart to allow for spreading.
Bake cookies for 7-9 minutes. Bake until edges are set. Do not over bake.
Allow cookies to cool for a minute or two before moving to cooling rack to cool completely.
Frosting
In a bowl combine softened Cream Cheese and Softened Butter.
Add Powdered Sugar and Vanilla Extract to cream cheese mixture and mix until smooth. Mixture will be very thick.
Gradually add milk a little at a time until desired consistency is reached.
Add Green Food Color and combine.
Decorating
Place frosting into a piping bag with star tip or snip corner of bag
Pipe a circle in the center of the cookie leaving center open.
Fill center of cookie with 3-5 Jelly Beans and top each nest with Peep Chick marshmallow treat
Store in a sealed container for up to a week. Best if enjoyed within 2-3 days. Cookies can be frozen up to 3 months.

Freeze: You can freeze the cookie bases in a freezer bag or freezer-safe container for up to 3 months. Place parchment paper between each cookie to prevent sticking. Simply defrost on the counter, make the frosting, and assemble the nests fresh before serving.
