Easy Cornflake Cookies (Chewy & Crunchy Texture)
Cornflake Cookies are made with simple pantry ingredients for the perfect balance of chewy and crunchy texture. A quick and easy No Bake Cookie Recipe that is a fast and tasty treat.

Ingredients
- 1 Cup Granulated Sugar 200 grams
- 1 Cup Corn Syrup
- 1 Cup Peanut Butter
- 1 teaspoon Vanilla Extract
- 6 Cup Cornflake Cereal
Instructions
- In a large saucepan on medium/high heat stir granulated sugar and corn syrup together until combined.
- Add Peanut Butter and continue to stir mixture scraping from the bottom as needed.
- Bring mixture to a full boil before removing from heat.
- Pour Peanut Butter Mixture over Cornflakes Cereal and stir to coat
- Once cereal is coated, drop spoonfuls on silicone lined baking sheet placing cookies 1-2 inches apart.
- As cookies cool they will form and harden
- Store cookies in a sealed container or Ziploc Bag

Quick Tips
I prefer the size of cornflakes used in this recipe over rice krispies cereal. Do not crush cornflakes but leave whole for a great texture. Light Corn Syrup can easily be used in this recipe. Trust me, there is plenty of sugar to go around as it is. Wax Paper vs Silicone liner? For no bake cookies I prefer to use a silicone liner. I find it’s easier to peel the cookies off a liner when cooled. But either works fine. There is no reason to chill or freeze these cookies. They can be stored at room temperature. Often times these cor flake cookies can be called cornflake candy too because they are so sweet it’s like enjoying a piece of chewy candy.
