Crispy and delicious Peanut Butter Cookies rolled in sugar are always a family favorite cookie. Turn them into these fun bear paws with plain chocolate chips and a chocolate wafer, aren't they cute?
Made with Peanut Butter, Butter, Brown Sugar, White Sugar, Egg, Vanilla Extract, Baking Soda, Baking Powder and All Purpose Flour
The soft dough forms the perfect shape when using a small cookie scoop #60. Great for Cookie Exchange or even a school lunch box. Don't you just love a good chewy cookie? I sure do.
Get that extra crispy edge by rolling balls of dough into granulated sugar. It's a simple step and makes such a difference.
Ingredients For Bear Claws
Dry Ingredients. Granulated Sugar, Brown Sugar, All Purpose Flour, Baking Soda, Baking Powder
Wet Ingredients. Butter, Peanut Butter, Vanilla Extract, Egg
Additional Ingredients. Chocolate Wafer and Chocolate Chips
Supplies / Equipment
I like to gather all the supplies I will need to make cookies before I begin. It also helps to clean the kitchen and wife off counters. That way I'm not tripping over myself as I'm working in my kitchen. A few of my favorite supplies are
- Kitchen Scale. I use this for accuracy in measuring and it's a life saver when it comes to consistent baking
- Wire Rack for cooling cookies. I like to have at least 2 cooling racks
- Mixing Bowls. A Large Mixing Bowl for mixing ingredients and small and medium mixing bowls for other ingredients
- Cookie Sheet. Most recipes will take 2 batches to bake. It's great to have multiple baking sheets available
- Parchment Paper or Silicone Baking Mat. Line Cookie Sheet with parchment paper for easy clean up and to prevent sticking.
- Cookie Scoop. A small #60 Cookie Scoop or a Medium Cookie Scoop #50 are great choices for uniform drops of cookie dough.
- Storage Container. An Airtight Container to store cookies or ZipLoc Bags work great too.
- Additional supplies. Measuring Cups and Measuring Spoons along with silicone spatula are all helpful

How to make Delicious Soft Cookies
Using a large mixing bowl and hand electric mixer cream room temperature butter, peanut butter and sugars together. Using a silicone spatula to scrape down sides of bowl as needed to include all ingredients together. Cream for 2-3 minutes.
Butter mixture will turn light and fluffy. Then add egg and vanilla extract and continue to mix together until combined.
Finally mix in flour with baking soda and baking powder just until combined. Dough will be soft but not sticky. Which is perfect when making Peanut Butter Cookies.
Using a small size cookie scoop, scoop cookie batter and roll in remaining sugar. Then place evenly on baking sheet
Bake in a 375 F preheated oven. Cookies will be done when edges are set. They do not need to turn golden on the edges. Remove from oven and quickly place 1 large chocolate waver on each cookie. Add 3 or 4 plain chocolate chips to form a bear paw print in each delicious cookie.
As you press the dark chocolate wafer and semi sweet chocolate chips into the cookie top will flatten and the heat from the cookie will melt the chocolate sticking it to the flat cookie.

Substitutions
Use my Vanilla Cookie Recipe instead of peanut butter and make a lighter paw cookie, or use a Chocolate Chip Cookie recipe without the chips which is also delicious.
A Peppermint Patty can be used as the pad of the paw on the paw as well as chocolate covered raisins or nuts for the toe pads. The ideas are endless. So look in your cupboards and find the additions that work for you!
Baking Tips
Softened Butter. Allow cold butter to sit on counter for 1 hour. Butter that sits out longer will turn to mush and will not cream well in recipes. Cream Butter with sugars to create a light and fluffy mixture ideal for baking cookies.
Cookie Scoops. Using cookie scoops to form large dollop of cookie dough helps with uniform baking.
Cooling Rack. Allow cookies to cool on baking sheet while adding chocolate wafer and chocolate chips. Then move cookies to cooling rack to fully cool.
Parchment Paper. I love to use parchment paper when baking. Cookies don't stick to parchment paper and it offers easy clean up too.
Measuring Ingredients. Using a kitchen scale to measure ingredients is very helpful.

Storage and Freezing
Store cooled cookies in an airtight container for up to a week. Cookies are best if enjoyed within 3-4 days.
Freeze cooled cookies in a sealed airtight container placing parchment paper between stacked layers to prevent sticking for up to 3 months.

Bear Paw Cookies
Ingredients
- ½ Cup Butter Softened
- ½ Cup Peanut Butter
- 1 Egg Large
- 1 teaspoon Vanilla Extract
- ¾ Cup Granulated Sugar *Divided
- ½ Cup Brown Sugar
- 1 ¼ Cup All Purpose Flour 150g
- ½ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- 48 Ghiradelli Candy Wafer
- ½ Cup Semi Sweet Chocolate Chips
Instructions
- Preheat Oven to 375 and prepare baking sheets with parchment paper
- Cream Softened Butter and Peanut Butter in large Stand Mixer or use a Hand Mixer. Scrape sides of bowl as needed
- Add ½ cup Sugar and Brown Sugar with Vanilla Extract together
- Cream Egg into butter and sugar mixture
- In a separate bowl mix Flour, Baking Soda and Baking Powder
- Add Flour Mixture to Butter Mixture and mix to combine
- Use a Small Cookie Scoop size #60. Roll cookie dough in reserved sugar to coat and place on baking sheet 2 inches apart.
- Bake at 375 for 7-9 minutes or until edges turn golden brown. Do Not Over Bake
- Remove from oven and immediately place chocolate wafer and chocolate chips on hot cookies. Allow cookies to cool on cookie sheet.
- Move cookies to cooling rack to fully cool. Store in a sealed container for up to a week. Best if enjoyed within 2-3 days.
