Summer just isn't Summer without a chewy peanut butter butterscotch bar recipe. We call them Oh Henry Bars or sometimes Scotcharoos. Mmmm, they are a delicious no bake cookie bar that we love!
Oh Henry Bars recipe makes a large batch which is ideal to share with friends, family and of course neighbors! It's also a popular recipe to take to a BBQ or Pot Luck event as everyone loves them.
Topped with a mixture of chocolate and butterscotch every bite is creamy and delicious. You will definitely be licking your fingers when your done to enjoy all the tasty goodness.

How to make Oh Henry Bars
This is a no bake recipe so everything we do will be on the stove in a large thick bottomed pot. The good news is I like to keep the mess minimal so I still to 1 large stockpot and a wooden flat bottom spoon is what I'll need to mix this recipe together.
In a large stock pot over medium / high heat add granulated white sugar and light or dark corn syrup together. Allow sugar mixture to combine while stirring together scraping the bottom of the pan as needed.
As the mixture heats up the sugar dissolves and will come to a boil. Continue to stir the bottom of the pot.
Heat and stir while bringing mixture to a full boil and allow to boil for a good 10 seconds. Then remove from heat. If you are using a digital thermometer you will want to reach 125-130 degrees.
Stir and add peanut butter to hot sugar mixture and stir to combine. The hot sugar will melt the peanut butter nicely.
Add in Rice Krispie cereal into mixture and stir to coat all cereal. Make sure to lift from the bottom and stir so that everything is covered evenly.
Pour mixture into a cooking sheet sprayed with cooking spray. This will help lift out the Scotcharoo recipe easily.
In a separate bowl combine Chocolate chips and butterscotch chips together. Microwave for 30 seconds and then give them a good stir. Microwave again for an additional 30 seconds and stir. If additional time is needed to melt chips add 15 seconds at a time and stir in between.
Pour melted chocolate over top of rice krispy treats and spread evenly over entire baking sheet. As bars cool so will the chocolate. Allow cookie bars to set on counter or in a cool place until ready to serve.
Substitutions.
We love to use Peanut Butter chips in place of butterscotch chips. It's also fun to top with Reese's Pieces or mini peanut butter cups too.
Use Corn Flakes in place of Rice Krispie Cereal in a pinch. It's also wonderful.
I have had these Scotcharoo Bars made with Oatmeal instead of Rice Krispie Cereal. They are both delicious, but I do prefer the rice cereal.
Pro Tips
Pan. Using a thick bottom pan is ideal so you do not burn sugar mixture. A medium saucepan can also be used. You will need a larger bowl to pour mixture over cereal and mix. A medium pan will not be large enough for all the cereal and mixture combined.
Snack. These bars are a great school snack or travel treat and everyone loves them.
Peanut Butter. Stir in the Peanut butter with the Hot Sugar mixture and the peanut butter will melt quickly.
Baking Sheet. Always spray baking sheet with cooking spray. This recipe is sticky and will easily lift up when baking spray is on a pan before you add this mixture.

Scotcharoos or Oh Henry Bars are an old time, old school recipe I feel like. They are timeless and everyone wants a bite. You can often find them or something very similar at gas stations too. Which is sort of a fun treat when they are soft and chewy.

Oh Henry Bars
Ingredients
- 3 Cup Sugar 600g
- 2 Cup Corn Syrup
- 2 Cup Peanut Butter 500g
- 8 Cup Rice Cereal
- 1 Bag Chocolate Chips Semi Sweet
- 1 Bag Butterscotch Chips
Garnish
- Sea Salt Flakes optional
Instructions
- In a large pot add sugar and corn syrup. Heat over medium high heat until a full boil. Stirring constantly
- Let boil for 10 seconds and remove from heat. IF you have a digital thermometer you want to reach 125 - 130 degrees.
- Remove from heat and Add Peanut Butter and stir to melt
- Add Rice Cereal and stir to combine making sure to lift from the bottom and evenly coat all cereal
- Pour in a greased cookie sheet and spread evenly.
- In a separate bowl combine Chocolate chips and butterscotch chips together. Microwave for 30 seconds and then give them a good stir. Microwave again for an additional 30 seconds and stir. If additional time is needed to melt chips add 15 seconds at a time and stir in between.
