What is heat treated flour you might ask. Honestly the first time I heard of this I thought someone was pulling my leg. Uncooked Flour or Raw Flour is laced with germs that cause food poising such as e. coli and salmonella.
And although flour doesn't appear to be raw, it's definitely a raw ingredient that should not be consumed until properly treated.
Treating flour is super simple with these quick steps. Flour needs to be heated. And this can be accomplished in a number of ways.
Place flour on a microwaveable safe plate and heat in microwave for 30 seconds. Stir flour and continue to heat until flour has reached 160F degrees. This will ensure any germs or bacteria have been properly killed.
How to Heat Treat Flour in the Oven
It's much easier to heat treat a larger batch of flour in the oven than in a microwave. Place flour on a parchment lined baking sheet spread evenly and place in a preheated 350F degree Oven.
The flour needs to reach 160F degrees for complete heat treating. This can take 5-7 minutes depending on the thickness of the layer of flour on the parchment paper.
Allow flour to cool back to room temperature and then store in a sealed container or ZipLoc Bag. Use Heat Treated Flour in any recipe you wish to consume uncooked.
How to make Easy Edible Cookie Dough
Start by grabbing a few kitchen items to make this process a little easier. An Electric Mixer or Stand Mixer is ideal. It's also a good idea to use a large mixing bowl for this simple recipe.
I also love a silicone scraper and a kitchen scale to measure ingredients. This recipe is much more forgiving if extra flour or sugars are added but I still prefer to have consistent measurements of ingredients before beginning.
Using a mixer on medium speed cream together softened butter with granulated white sugar and brown sugar. Cream these ingredients together for 2-3 minutes. Making sure all the ingredients are incorporated together. Mixture will begin to turn light and fluffy.
Adding in vanilla extra will help the mixture if it appears dry. Now a word of caution. If your butter mixture appears dry, it's likely due to adding too much sugar than the recipe called for. But don't worry, I'll help you easily solve this.
After the mixture is creamed nicely go ahead an add the Heat Treated All Purpose flour and salt. Combine ingredients.
Trust the process here. The mixture will seem dry but continue to mix together until dough forms.
Now add 1-2 tablespoons of milk or water to the cookie dough. This will help soften the cookie dough and remove any dryness that you might have.
Stir in Mini Chocolate Chips, Milk Chocolate Chips, White Chocolate chips or even a combination of your favorite chips.
How to keep Cookie Dough from being Dry After Refrigerating
If I'm planning on refrigerating cookie dough I always add an extra tablespoon of milk or water to the cookie dough when mixing. I find after the dough is chilled it tends to become dry naturally. I prefer my cookie dough a little more wet. This is purely a personal preference.

Ingredients
- ½ Cup Butter Softened
- ¼ Cup Granulated Sugar 50g
- ½ Cup Brown Sugar 106g
- 1 teaspoon Vanilla Extract
- 2 Tablespoon Milk
- 1 Cup All Purpose Flour 120g
- ¼ teaspoon Salt
- ¾ Cup Mini Chocolate Chips
Instructions
- In a large mixing bowl cream together softened butter with granulated sugar and brown sugar. Mixture will become light and fluffy. Scrape sides of bowl as needed
- Mix in Vanilla Extract and Milk into butter mixture and cream
- Add All Purpose Flour and Salt and mix to combine. Mixture will come together nicely.
- Hand stir in mini chocolate chips. Feel free to add more or less chocolate chips.
- Store in refrigerator
- Recipe makes approximately 24 scoops of cookie dough using a size #50 cookie scoop. About 1.3 Tablespoons of cookie dough.
