How to make Cookies from Brownie Mix
Double Chocolate Chip Brownie Mix Cookies are going to rock your world with how easy they are. So grab the ingredients and a few kitchen supplies like measuring cups and spoons. A large bowl, baking sheets and whatever else you think you might need.
There is no need for a stand mixer or even a hand mixer with this simple recipe. Let's get started, shall we?
In a large mixing bowl add boxed brownie mix and flour and mix together so you can no longer see the white of the flour in the brownie mix.
Create a well in the center and add large egg, vegetable oil and water. Using a spoon begin to mix egg gradually adding in the brownie mix and continue stirring until all the brownie mix is combined with the wet ingredients.
Then stir chocolate chips into the brownie batter cookie dough. I prefer using Semi Sweet Chocolate Chips but try using White Chocolate chips, or even Peanut butter Chips for fun.
Pretty simple right? Well, it's meant to be that easy. In fact, this is a great recipe to get the kids involved to help.
Cookie Sheet Baking
Using spoons or a small cookie scoop carefully scoop cookie dough onto an ungreased baking cookie pan. You can also line baking sheet with parchment paper or a silicone liner for easy clean up if you prefer.
Place cookie dough at least 2 inches apart on baking sheet and bake in a preheated 350 degree oven.
Baking tip for you, do NOT over bake these cookies. The tops will have a thin cracked edge layer where you can still see dark brownie under neath. Keep in mind the cookies continue to cook on a hot cookie sheet even after they have been removed from the oven. Trust me here.
When in doubt, try baking just one or two cookies first to test the baking time before baking an entire pan. It's worth it.
Allow hot cookies to cool for a minute or two on pan before moving to a wire rack to cool completely.
Storage and Freezing
After cookies have fully cooled. Store cookies in an airtight container or ZipLoc Bag for up to a week. Cookies are best enjoyed within 2-3 days.
Freeze Cookies for up to 3 months when properly stored. Place parchment paper between layers to prevent sticking.

Brownie Mix Cookies with Chocolate Chips
Ingredients
- 1 Box Brownie Mix Ghirardelli Brownie Mix or Betty Crocker Brownie Mix 18.4oz
- ¼ Cup All Purpose Flour
- 2 Eggs Large
- ¼ Cup Vegetable Oil Canola Oil
- ½-3/4 Cup Chocolate Chips Semi Sweet, Milk Chocolate, White or Mini Chocolate Chips
Instructions
- Preheat Oven to 350 Degrees
- In a large bowl combine Brownie Mix, Flour, Eggs, Vanilla Extract, and Vegetable Oil.
- Using a hand mixer mix until combined.
- Had stir Chocolate chips reserving a few chips to add to top of cookie dough
- Place spoonfuls of cookie dough on parchment lined baking sheet making sure to place 2 inches apart
- Bake at 350 degrees for 7-9 minutes.
- Allow cookies to cool on pan for 5 minutes before removing

Tips:
- Cookie dough is sticky. I prefer to use spoons top place cookie dough on baking sheet.
- Parchment Paper or well greased cookie sheet helps to lift cookies off baking sheet after baking
- Add a few extra chocolate chips on top for baking
- Any brand of Brownie Mix works. I prefer Betty Crocker, or Ghirardelli Brownie Mix
- For crispier cookie bake longer
