    Red Velvet Sandwich Cookies are truly rich and delicious filled with a Cream Cheese Filling. A cookie you will fall in love with after just one bite. Soft and Chewy and perfectly baked. A fun Sandwich Cookie Recipe for everyone.

    Red Velvet Sandwich Cookies

    Red Velvet Stuffed Cookies are often a tradition around the holidays, especially Christmas. Red Velvet Christmas Cookies are so pretty in the deep rich red color. Reminds me of a visitor from the north pole. Don't you think?

    But I'm here to share with you that these cookies are wonderful year round.

    Making cookie Sandwiches are pretty simple to make. Fill with yummy frosting and place a cookie on top! Yes, it's just that simple. Regardless, I do have a few tricks up my sleeve that I'll share with you too.

    You may also like Texas Sheet Cake Cookies, Pumpkin Chocolate Chip Cookies, Cream Cheese Cookies or Butter Beer Cookies all made with cake mixes.

    Shopping List for Red Velvet Cookies from Cake Mix

    This recipe takes only 3 ingredients for the cookies.

    Red Velvet Cake Mix, Eggs and Oil.

    Simple, right? It's so simple that even the less experienced bakers can make this recipe without any problem. To make the Cream Cheese Frosting you will need just 5 simple ingredients.

    Cream Cheese, Butter, Powdered Sugar, Vanilla Extract and Milk.

    That's it. And it's likely that you have most of the ingredients on hand. And here is a tip for you. You can use ANY flavor Cake Mix. They just won't be Red Velvet Cookies now will they! 😉

    How to make Red Velvet Sandwich Cookies

    Using a large bowl and a hand mixer combine dry box of cake mix, eggs and oil. Start hand mixer on low speed until ingredients are mixed together gradually adding speed until dough forms.

    You can also use a stand mixer if you wish. I love my Bosch Universal Mixer and use it regularly.

    Once mixed together cookie dough will be sticky. If you prefer you can chill cookie dough for 20-30 minutes in refrigerator. Chilled dough will make thicker cookies. Chilled dough will make flatter larger cookies.

    Cake Mix Cookie dough on Baking Sheet

    Scoop Cookie Dough using a medium cookie scoop and place on prepared baking sheets with parchment paper or grease with baking spray. Dough Balls should be placed 2 inches apart. Bake in a preheated 350 degree oven.

    Cookies are done with edges turn a very light golden color and centers are set. Do not over bake cookies.

    Allow cookies to cool on baking sheet for a couple minutes before moving to cooling racks to completely cool.

    Cream Cheese Frosting

    Making a cream cheese frosting is quick and easy. In a large bowl or stand mixer combine cream cheese and butter and mix together. Scrape sides of bowl as needed.

    Add powdered sugar and mix. Frosting will be very thick. Add vanilla extract and combine. Slowly the frosting will thin down a little bit.

    Add milk a little at a time. I use about 1 tablespoon milk for a perfect thick cheesecake filling.

    Cream Cheese Frosting on Sandwich Cookies

    Using a piping bag or a ziploc bag snip corner off and pipe frosting onto cookie. Top with a similar size cookie making a sandwich.

    Storage and Freezing

    Cookie Sandwich with Cream Cheese Filling are always fun. These cookies can be made in advance if needed.

    Store cooled cookies in a sealed container in refrigerator for up to 1 week. Best if enjoyed within 2-4 days.

    Freeze Cookies in a sealed container for up to 3 months. Place parchment paper between stacked layers to prevent sticking.

    Cookie Dough. Cake Mix Cookie Dough can be sticky. I often find it hard to scoop. Chill cookie dough in refrigerator for 20-30 minutes. This helps scooping cookie dough and making thicker cookies.

    Baking Sheets. I love using Parchment Paper on baking sheets. You can also spray with cooking spray or use a silicone liner.

    Piping Bags. I find it quick and easy to use a piping bag with the corner snipped off when filling this recipe for red velvet cookie sandwiches. You can use a knife and spread a thick layer of creamy frosting on each cookie too.

    Ingredients

    • 1 box Red Velvet Cake Mix
    • 2 Eggs Large
    • ⅓ Cup Vegetable Oil

    Cream Cheese Filling

    • 8 ounce Cream Cheese
    • ¼ Cup Butter
    • 4 Cup Powdered Sugar 520g
    • 1 teaspoon Vanilla Extract
    • 1-3 tablespoons Milk
