You can use a homemade crust as well which is delicious or a good pre-made refrigerated crust.
How to make Cookies from Pie Crust
Gather the needed ingredients along with supplies needed. Preheat oven to 350 degrees and prepare baking sheet by lining with parchment paper or spraying with cooking spray.
Lightly flour surface and unroll pie crust. Gently roll out dough. Use a rolling pin to lightly press dough flat.
Make and egg wash by adding a tablespoon of water to an egg and whisk together in a small bowl. Using a pastry brush, brush egg wash over pie crust
Sprinkle with sugar and cinnamon mixture and cover dough. Using small tiny cookie cutters to cut and press into cookie dough making shapes, or cut with a knife making squares or rectangles.
Pie dough scraps from leftover pie dough can be baked for additional fun snacks.
Place cookies on baking sheet and bake until golden brown. Allow cookies to cool completely before moving to cooling rack.
Store cookies in a sealed container for up to a week.

Pie Crust Cookies
Ingredients
- 2 Refrigerated Pie Crust 1 box with 2 pie crusts
- ½ Cup Granulated Sugar
- 1 ½ teaspoon Cinnamon
- 1 Egg
- 2 tablespoon water
Instructions
- Preheat oven to 350 Degree. Prepare baking sheet with parchment paper or use baking spray
- Unroll refrigerated Pie Crust on a lightly floured surface and with a rolling pin, roll the dough lightly to flatten.
- In a small bowl whisk egg with water and brush onto pie crust forming an egg wash.
- In a separate bowl combine sugar with cinnamon and combine
- sprinkle sugar mixture over pie crusts
- Use small cookie cutters in fall shapes to cut cookies out
- plate on baking sheet and bake at 375 degrees for 8-10 minutes or until edges are golden brown
- Allow cookies to cool on baking sheet before moving to cooling rack to cool completely.
