    Individual Fruit Pizza Cookies with Cream Cheese Frosting

    I'll be first in line for a Fruit Pizza Cookies loaded with fresh fruit on a soft sugar cookie. And the cream cheese frosting to pull it all together is a favorite for sure!

    Fruit Pizza Cookies

    My soft Sugar Cookie Dough is a perfect choice for this fun and tasty mini desserts cookie recipe. Don't get me wrong, you can make a giant Fruit Pizza if you wish the only thing that will change is the baking time.

    Serving individual size mini fruit pizza cookies are a blast. Make them all the same or customize them with different fruit toppings and let your guests choose which one they want first.

    Sugar Cookie Pizza with Fruit Ingredients

    Fats. Butter, Vegetable Oil, and Coconut Oil

    Dry Ingredients. White Sugar, Powdered Sugar, Baking Soda, Cream of Tartar, Salt, All Purpose Flour

    Milk, Eggs, Vanilla Extract

    Fruit. Strawberries, Mandarin Oranges, Pineapple, Strawberries, Blueberries, Kiwi, Melon

    Frosting. Cream Cheese, Butter, Powdered Sugar, Vanilla Extract, Milk

    How to make Sugar Cookie Fruit Pizza

    Have I mentioned how much I truly love this sugar cookie recipe? Let me share it once again. These cookies are perfect.

    They are soft and yet crispy on the outside. I love to make them using a pure vanilla extract but don't be fooled because Almond Extract is also fantastic in this recipe.

    Gather all the necessary ingredients and supplies you might need. And I recommend weighing dry ingredients for accuracy. Measuring cups can be off as far as measurements go.

    Preheat oven and prepare baking sheets with parchment paper or silicone mat. Cooking Spray can also be used.

    In a large bowl using an electric mixer or use a stand mixer like a Bosch or Kitchen Aid cream together Butter and Coconut Oil with white sugar. Scrape sides of bowl as needed and cream until light and fluffy.

    Add eggs and mix until combined. Drizzle Vegetable oil into butter mixture and cream. Add Vanilla Extract and milk.

    In a separate bowl combine dry ingredients: powdered sugar, baking soda, cream of tartar, salt and all purpose flour. Add dry ingredients a little at a time until combined.

    To make cookies use a medium cookie scoop and place 1 scoop on baking sheet lined with parchment paper. Add a second cookie dough scoop on top of the first and press down.

    Using the bottom of a glass dipped in sugar press cookie dough flat. Edges will ruffle and crack forming a larger flat cookie.

    Bake as direct and allow to cool on baking sheet for a minute before moving to cooling rack.

    In a bowl cream butter and cream cheese together. Mixture will be thick. Add powdered sugar and continue to cream together.

    Thin frosting by adding Vanilla Extract and milk a little at a time until desired consistency is reached.

    Frosting Soft Sugar Cookies

    Spread frosting on cooled cookies and top with diced fruit.

    Fruit for Fruit Cookies

    Wash and cut fruit into tidbit sizes to place on cookies. Strawberries, Oranges, Bananas, Kiwi, Grapes, Blueberries, or whatever you prefer.

    Pro Tips

    Choose Fruit in season. Strawberries, Raspberries, Kiwi, Bananas, Mandarin Oranges, Pineapple, Blackberries, Blueberries, Grapes and Melon and the list can go on.

    Dicing Fruit. Cut fruit into small tidbit sizes. When placed on a cookie smaller is better. Discard juices before placing fruit on top of cookie.

    Baking Sheet. Line cookie sheet with parchment paper or silicone baking mat

    Ingredients. Use softened butter and room temperature egg in this recipe for best results. Butter that has turned to mush is too soft and should not be used.

    Plan Ahead. Bake cookies a day or 2 in advance and freeze until ready to enjoy. Then top with frosting and diced fruit.

    Variation

    We all love Fruit Pizza but what about a fun twist and try with a Peanut Butter frosting topped with Chocolate Chips or Chocolate Ganache. Now doesn't that sound wonderful too?

    Storage Fruit Pizza Recipe

    Plain sugar cookies can be stored in a sealed container for up to a week or frozen up to 3 months.

    Fruit Pizza Cookies topped with frosting and fruit should be stored in an airtight container in the refrigerator for up to a week. Cookies are best if enjoyed within 1-2 days.

    This means you can easily make the cookies well in advance and then frost and top with fruit when ready to serve and enjoy.

    When my boys were young I found it easiest to only add the kids favorite fruit on the cookie pizza recipe so they had exactly what they liked. As they grew up a little I was able to add more fruit and get them to try more options.

    Sugar cookie crust is a favorite topped with a sweetened cream cheese frosting and fruit. It's a match made in heaven!

    How to make a Large Fruit Cookie Recipe

    I love the small individual cookie size but I know many also like to make a larger pizza cookie recipe. This recipe is made the same way.

    Cookie dough can be spread onto a pizza pan, or even use a 9x13in baking dish. Spread dough in a greased baking dish before baking.

    Bake cookies at 350 degrees for 18-22 minutes or until edges are a light golden and center is set. Allow to fully cool before adding frosting or fruit.

    Serve Chilled.

    Fruit Pizza Cookies

    Easy to make soft sugar cookies a Swig Copycat Recipe topped with a smooth and creamy cream cheese frosting. Top with small tidbit size pieces of fruit.

    Ingredients

    • 1 cup Butter Softened
    • ½ Cup Vegetable Oil
    • ¼ Cup Coconut Oil
    • 1 ¼ Cup Granulated Sugar 250g
    • ¾ Cup Powdered Sugar 98g
    • 5 ¼ Cup All Purpose Flour 630g
    • 2 Eggs Large
    • 2 tablespoons Milk
    • 1 teaspoon Vanilla Extract
    • ½ teaspoon Baking Soda
    • ½ teaspoon Cream of Tartar
    • ¾ teaspoon Salt

    Frosting

    • ½ cup Butter softened
    • 4 ounces Cream Cheese
    • ½ cup Coconut Oil
    • 4 cup Powdered Sugar
    • ¼ cup Heavy Cream
    • 2 teaspoons Almond Extract *or Vanilla Extract

    Fruit

    • Strawberries
    • Bananas
    • Mandarin Oranges
    • Blueberries
    • Pineapple
    • Rasperries
    • Blackberries
    • Kiwi

    Instructions

    • Cream butter, Coconut Oil together and then add Vegetable Oil. Cream until light and fluffy about 3 minutes. Scrape sides of bowl down
    • Add granulated Sugar and Eggs.  Whip until light and fluffy.  Beat in milk
    • In a separate bowl combine Powdered Sugar, Baking Soda, Cream of Tartar, Salt, and Flour.  Mix to combine.
    • Add flour mixture a little at a time until fully incorporated.  The dough will be soft but not sticky.
    • Scoop dough using a medium-size #24 cookie scoop.  Place 2 scoops, one on top of the other of cookie dough) on greased cookie sheet or parchment lined baking sheet.
    • Use the bottom of a Mason Jar or Glass and press cookie dough.  Dip into sugar and repeat on all cookies.
    • Bake at 350 degrees for 8-9 minutes.
    • Allow cookies to cool on pan for 5 minutes before moving to cooling rack to cool completely.
    • Do not over bake cookies. Makes 32 cookies

    Cream Cheese Frosting

    • Cream Softened Butter and Coconut Oil.  Add Heavy Whipping Cream, Almond Extract and Powdered Sugar and Mix until fluffy. Mix in a few drops of Pink Food Coloring for color
